~65% Syrah, 35% Grenache. Whole-cluster, foot-trodden 2–3 times in a short 11-day ferment, ~13 months in old barrels, bottled at just 12 months. Nate: the cool, frost-touched 2019 rendered a wine “more reminiscent of Northern France than what is usually possible here… as if Rayas had grown the grapes for their Fonsalette in Côte Rôtie.” The last vintage of one of Hiyu's first Gorge wines.
