Winemaker Notes
We have been patiently waiting to share the newest release of one of the latest additions to our regular Johan repertoire. Many are familiar with our Melon de Bourgogne Pet-Nat, however fewer have had the chance to enjoy the still wine we produce. This is only our second vintage to be released. It is perfectly suited for our site and climate, and newly grafted vines will allow us to produce more to share in the future. After a 36-hour skin Maceration, we pressed the juice off the skins, then barrel fermented and aged the wine on its original lees for io-months, inspired by the classic wines of the Loire. Our interpretation "rhymes" with theirs, so to speak, but with a new world voice with which we deeply resonate.
