Winemaker Notes

: zero/zero is a term used in the natural wine scene to describe a wine made with “nothing added and nothing taken away”. Pinot Noir’s delicate nature makes it a generally difficult candidate to be “safe” without a small amount of sulfur at bottling. For our zero/zero pinot, we chose four of the barrels that we felt had all of the stars aligned, and the naturally occurring components and chemistry to be able to age gracefully in bottle with nothing added, and nothing taken away. With a beautiful balance of tannin, acidity, and a low finishing ph, this is a living wine for you to enjoy! Ingredients: Biodynamic grapes clones/blocks: @ pommard (destemmed) — block: iibc e@ 114 (destemmed) — block: 7a @ 667 (20% wc) — block: 1 © 943 (41%wc) — block: 12g overall wc% = 15% total wc inclusion bottling date: April 22, 2019 (6 months in bbl) **all neutral bbls/no oak impact in order to have the most “pure” expression of the grapes from the site**
