A 13hl wood vat filled to overflowing with hand-picked grapes, left two weeks untouched; a small amount of the fruit was dried on racks and added during treading for extra energy; two years in old cigar-shaped barrels, zero SO2. Nate: “a bonfire of juniper boughs, waves of lavender incense in cold air around an alpine shrine; dark fruits abound.”
