Co-fermented in a conical wooden vat 10 days, pressed to barrel to finish and age ~a year. Personality (Nate): the very long season (picked the first week of November) takes the Gewürz through gold to a deep ruby color, avoiding exoticism and residual sugar in favor of minerality and fine perfume — “more like top-level Condrieu than what you'd expect from its parent grapes.”
