Multi-vintage solera blend, oldest component 2017. Hazy dark orange with an intense aroma of violets, roses and all the fruit involved; tart acidity, light fizz and low (8%) alcohol.

A wild multi-vintage, multi-fruit co-ferment (not a cider): Pinot Gris grapes with heirloom pears, plum, blackberry, elderberry and rosehip, all wild-grown (unsprayed, unpruned) in Hiyu's hedgerows and forest gardens. Made solera-style (oldest base 2017). Pinot Gris and pears are fermented, then plums and berries macerate on skins before a second press; near the end the prior year's reserve is added, part bottled as pét-nat and part barreled down and infused with later winter berries. Unrefined, unfiltered, zero SO2. “Espina” means thorn, for the rosehips. Hazy dark orange, violet- and rose-scented, tart, lightly fizzy, ~8% ABV and very easy to drink.
