A pale, finely structured Burgundian field blend (primarily “Pinot Fin” with over thirty heirloom Pinot clones) from one of four small parcels within The May, above the pond east of Hypericum. Heavy millerandage and tiny yields give small, open clusters; typically just one barrel (~300 liters) is made. Native-fermented whole-cluster in an open conical wood vat, foot-trodden before pressing, aged untouched on lees and bottled by gravity, unfined and unfiltered. Personality: pale color, refined aroma, delicate structure, long finish.
