Winemaker Notes

Personality (Nate): “it glows and just alludes to orange. It tastes of melon, mirabelle, Sichuan pepper and green high-mountain oolong — extremely delicate, understated, precise and tea-like. Culture: a picnic with the cows in an alpine meadow.”

About · community & editorial

Hiyu's first wine from a regeneratively farmed site at 1400 ft on the west side of Underwood Mountain — “Big River” growing on south-facing slopes above the Columbia, very cold and Alpine (Albariño ripens in November here). A Gemischter Satz-style co-ferment of Grüner Veltliner, Chardonnay, Pinot Gris and Pinot Blanc, picked together, ~2 weeks on skins whole-cluster, foot-pressed and finished en cuve, then old casks; bottled early without sulfur.
