A traditionally styled Pinot Noir blending eight barrels from all three Hiyu Pinot Noir parcels — Oak Ridge, Elder and the home estate. Whole-cluster in open-top conical wood vats, foot-trodden, basket-pressed, two years on lees in old barriques. Denser and meatier than Hiyu's ephemeral, infused Pinots.
