Hiyu's flagship Grenache, from deep black sand at the water's edge of Scorched Earth, a site Nate likens to “Southern Rhône Grenache on sand with the wildness and vibrancy of Nerello Mascalese on Etna.” Small amounts of the other Châteauneuf varieties have been interplanted. Spontaneous whole-cluster ferment, 3 weeks on skins, 23 months untouched in old 500-liter puncheons.
Vintages
Personality: light yet complex, with scents ranging from fresh flowers, herbs, ripe dark fruit, lavender and sweet spice to more animal touches of earth, sousbois, tobacco and leather.
