Successive solera bottlings (Atavus VI–VIII). VI was topped with slow-fermented 2017, capturing more dissolved CO2 and salt/umami depth. VII drew on 2013–2020 (including 600L ovals of 2017–2018), “the most intense bottling yet… darker with each vintage, the aromas of fruit and herb more magically charged.” VIII, the final release, was topped not with young wine but with a Ripasso-style reserve passed over desert-wine pomace — “taking this already meditative wine to an entirely other dimension.”

A long-aged, skin-contact solera white from old 1960s vines on the high Atavus ridge. A Gewürztraminer–Pinot Noir field blend in which some Gewürz is visibly mutating back toward Savagnin. In barrel the wine moves from floral Gewürztraminer through long-pepper Grüner-like spice to a salty, Vin Jaune-like character around three years, which inspired the multi-vintage solera (think Palo Cortado or Oloroso). A small amount is drawn and replaced each year. Hiyu has made wine here since 2013.
