A Germanic field blend on a 0.2-hectare gentle slope of sandy loam over basalt, primarily Riesling and Furmint with Alsatian (Muscat, Gewürztraminer, Pinot Gris, Sylvaner) and more unusual Austrian and Hungarian grapes (Hárslevelű, Grüner Veltliner, Rotgipfler). Nate frames it as Hiyu's version of a Viennese Gemischter Satz, "the perfect wine to drink with the food we serve in the tavern, especially the transcendent cuisine of winter.” Direct-pressed, spontaneous ferment, ~2 years in old casks, zero SO2.
