From the original 2.5-acre, own-rooted block (planted in the 1990s) in the far western, forest-edged corner of the estate that Hiyu first began farming in 2011, the steepest aspect and most intensely perfumed fruit on the site, ~90% Pinot Noir with Pinot Gris. As this corner was grafted to other field blends from 2016, single-vintage bottlings like this are “a rare glimpse into our past, bound to disappear.” Named for the hawthorn (“may”) of old English lore.
Vintages
Hand-harvested, co-fermented whole-cluster in 500-liter puncheons with the heads removed, 70 days on skins, pressed to barrel and aged on lees 24 months, 5ppm SO2 at bottling. Personality: richly textured, stunning and layered Pinot Noir.
