The rarest of Hiyu's wines, a single barrel some years, from the smallest, sparsest black-sand parcel (under half an acre) on the same steep desert hill as Fionn and Aedín. A ~70% red field blend inspired by Sardinian Graciano and Carignan but reaching across Southern Italy: Negroamaro, Nero d'Avola, plus white Biancolella, Vermentino, Trebbiano, Verdicchio, Catarratto and Fiano. Named for the beehive-shaped dry-stone huts of the southwest Irish coast.
