A Canary Islands-inspired field blend — Pink Negramoll, Listán Negro, Malvasía Fina, Mission, Palomino and Babosa Negro — grafted in 2020 over the former Lúnasa Syrah on a windswept sandy plateau. “Sean Nós” means “in the old way”; the cuttings come from a 100+-year-old interplanted vineyard in Tenerife. Made as a white, pink or red depending on the year; by co-fermenting many grape colors Hiyu reaches a translucent strawberry pink “a step further than orange wine.”
